Who knew curry noodle jars will be in my handbag as I go for my meetings? Well, thanks to my convenient mason jars. They lock in nicely and don’t make a mess.

Ingredients:

1 oz dry rice sticks pad Thai noodles

3 cups boiling water

2 medium carrots, peeled and shredded

¼ cup spinach, cut into ribbons

¼ cup shredded red cabbage

2 grilled chicken breasts, cut into thin strips

1 scallion, thinly sliced

2 tsp Thai curry paste

2 tsp coconut aminos

2 tbsp coconut cream
